What Is Double Fromage Cheesecake


Delicious and exciting to prepare, a double fromage cheesecake is increasingly gaining popularity among the food lovers of the world. Consisting of three special layers – sponge cake base, baked cheesecake and no-baked cheesecake on top, credit goes to a Japanese bakery named LeTAO for introducing it. The amalgamation of these layers offer the cake with a creamy, cheesy but, soft and fluffy taste.

To prepare a double fromage cheesecake, an extra effort is required, but trust me, once you are done with all the layers, you will never be disappointed with its flavoursome and moist texture. It might not be as rich as the normal cheesecakes! But the moment its silky and smooth texture starts melting in your mouth, you will be definitely amazed with its taste, leaving you tempting for more.  

As it is a combination of three layers, where two of them require baking in the oven and the complete cake needs to be kept in the fridge for few hours, it is always advisable to plan a couple of days beforehand, prior to preparing it finally.

1. The Sponge Cake Layer:

This particular layer needs to be prepared out of whole egg and not simply from egg yolk or the white. This is so because it needs to be thicker and firmer to hold the other two layers properly on top. Also don’t over bake the sponge cake layer, else it will become too hard. Later while cooling it down, take care to do so upside down, to avoid shrinking.

2. Cream Cheese Layer:

Always make sure to use cheese that is at room temperature, else the ingredients won’t mix well. Mix the beaten eggs, whipped cream and the cheese gradually. The batter should be smooth and runny, instead of watery. While baking the cream cheese layer, don’t wait to take out the cake until the top turns golden. Once baked, let it cool down.

3. Mascarpone Cheese Layer:

While heating the milk and the sugar in a pan, don’t allow it to boil, else when you add the eggs, they will become scramble. This layer is prepared by chilling in the fridge and the milk mixture is heated just to drive the raw egg smell away along with existing bacteria.

4. Sugar Ratio:

Double fromage cheesecake is not normally a sweet cake. That is why sugar amount used is very less. But in case, you want it to be sweet, you can increase the sugar ratio.
